Change in Menu
We were going to have Corned Beef & Cabbage today (yes, it was amusing as this is traditional St. Patrick's Day fare). We changed our minds.
We had a Strata (eggs, mushrooms, peppers, onions, bread, in a casserole) which was served late and was VERY filling.
We are going to have peach pie for dinner.
There are benefits to not having children in the house for whom you must set a good example

Oh, I LOVE corned beef and cabbage. I very seldom make it as I'm the only one that likes it, but mmm mmm good!
The strata sounds good too (minus the peppers...vegetables...ick, phewy phewy...). Okay not all vegetables, but cooked peppers? Unh unh.

That sounds really good, Leslie. We went to my parents' place. They always do a big feast for every holiday. Mom doesn't care for ham, so we did a turkey. I helped as much as I could because Mom's not all that well anymore. She still likes to have a huge dinner for the family though. We had turkey, stuffing, cranberry sauce, mashed potatoes, candied sweet potatoes, corn, green beans, cole slaw, and red beet eggs (big regional thing.) For dessert, blackberry pie, pecan pie, and sugar free apple pie for Frank. She sent us home with enough left overs for a couple of meals. Way too much food, but it was great.

now I know what I am making when you come for dinner!! I make a phenomenal corned beef and cabbage spread- my entire family begs for it We do it at least once a year ( my sons a st pattys day baby) - Ive made it twice this month just cuz it was soooooo good and leftovers didn't last ad long as we wanted

I also love corned beef and cabbage.
Sometimes I will cook cabbage and put a slice of cheese over it.
My hubby love it.
For our dinner, we had the traditional ham.
We had sweet potatoes, mashed potatoes and gravy, corn, stuffing and blueberry muffins.
I thought about turkey this year because it just sounded good, but hams were much more plentiful than turkeys were and I couldn't find a turkey I liked.
Anyway, it's just hubby, me and my daughter, so we didn't need alot of food.
We will be having scalloped potatoes and ham this week, ham sandwiches, and use the ham bone with beans and cornbread.
That's what I love about eating a turkey or a ham, it goes along way for us.

Me too, Cindy. These days, we need to stretch the food budget as far as possible. Things like turkey, ham, and whole chickens give us multiple meals. I love that! I picked up several corned beef briskets when they were dirt cheap for St. Pat's, and I just picked up a few hams when they were cheap the week before Easter. I love my deep freeze. It lets me stock up on those good buys when I see them. It really helps financially.

Hubby refuses to eat any meat that has been frozen. Even if it's just for a couple days. Some how he can tell. He grew up in a family that was very large and very poor. HIs mother would stock up but didn't wrap the meat properly, and he grew up eating freezer burnt meat. He also won't eat left-overs.
We live a little ways out of town and it would be so convient to just grab something from the freezer.
But, hubby is so undemanding and easy to get along with, I listen when he puts his foot down.

Charlotte, Does your husband ever eat at restaurants? If yes, does he realize that restaurants freeze meat? Plus, most of the meat in the supermarket has been frozen once between the butcher and the meat case.
I don't doubt he had a bad relationship with frozen food as a kid but he's old enough now to realize he's making a stand which doesn't really have any merit.
If this doesn't make much difference to you, then let him be. I just think you could have life much easier if he knew the difference doesn't have a distinction. ;-)

Shhhhhh...Leslie, we'll just leave him dumb and happy on that one.
Plus, he does most of the cooking so it's more skin off his nose than mine.
Theresae : I just put my corned beef in the pressure cooker with water. It gets so nice and tender that way. I have to be careful though when I add the cabbage, last time I ended up with cabbage soup because I cooked it to long and it got really mushy.

LOL she doesn't want to tell him about restaurants or she'll never get to eat out again.
Hubby is a very picky eater, but fortunately leftovers aren't an issue.

OH my goodness, Cheryl, that looks so yummy! I'd make it if DH ate cranberries...or any other dried fruit. lol Told ya he was picky.

I was actually surprised how good it was. Easy to make. Saute the shallots in butter and olive oil, add the pistachios and saute some more, add the cranberries and saute some more, add the cream and chicken broth--simmer until it cooks down. Add to cooked orzo pasta and you're done!
It was pretty with the green and red.

Here at Ravenhurst we had the traditional lamb for Easter. Strata is Christmas Morning in my family - our brunch after presents.
I love lamb - but wish it were named something else - I feel so "Silence of the Lambs" and "Mary Had A little Lamb" when I cook it ... but I do love it.
Couldnot afford a full leg this year, so we had lamb chops - "fresh" from New Zealand! what a world we live in - fresh meat from across the Pacific Ocean, the date line, and the equator ... amazing.
